    Pago de Espejo manufactures genuine AOVEs that reach the final consumer directly from their producer. We have more than 200 hectares and 8,000 centenary picual olive trees in Jaen. There, we harvest olives by means of a meticulous selection process and manufacture oil through limited integrated production..

    Why buy Pago de Espejo extra virgin olive oil?

    We have never stopped growing since 1920, reaching a production volume of over 250,000 kilos. We are the fourth generation of women olive growers who are devoted to taking care of our olive trees, harvesting our olives and producing our picual olive oil.

    In only four years, our signature olive oil has won the palate of professional tasters and private consumers, as well as some prizes such as the Quality Award at Expoliva 2017, the most important international exposition in the olive industry, and the award for Best Limited Production Olive Oil. Therefore, the quality of our olive oil is largely assured.

    Even though our olive oil is available in gourmet shops, some Michelin-starred restaurants and other points of sale, in Pago de Espejo we also act as producers, so your orders will arrive directly at our olive mill, from where we will manage the shipment.

    Our AOVE is free of chemical treatments, its extraction and production process being completely natural.

    Our olive oil

    • Pago de Espejo oil is a picual olive juice from Jaen. It is an early harvest olive oil from early November. That time, when fruits are “en envero”, which means they are not fully mature yet, is the optimal time for harvesting in order to obtain a quality gourmet olive oil.
    • Cold extraction through mechanical processes to ensure that the oil’s organoleptic properties remain intact. The picual variety yields the richest oil in terms of oleic acid, with a great concentration of antioxidants like vitamin E.
    • Our olives are milled within 24 hours after they are harvested through a rigorous selection system, allowing us to obtain a well-balanced and top-quality extra virgin olive oil.
    • AOVE is the oil that best resists high temperatures. It can withstand temperatures of up to 180 °C without losing its properties or oxidizing. That makes it the best oil to fry from meat and fish to vegetables.
    • On the palate, our olive oil from Jaen has a sweet fruity flavour with a slightly spicy twist at the end typical of the picual variety.
    • On the nose, our olive oil has an intense aroma of fresh fruit, banana, almonds, freshly cut grass and hints of tomato.
